Microgreens for the win!
They have a much higher concentration of phyto-nutrients than mature vegetables/herbs.
Every plant grown on the farm is harvested at the peak of it's nutritional density, which for most vegetable plants like Broccoli or Kale is
between 1-2 weeks old.
At this stage, they're considered a 'Microgreen'. Studies have shown them to be 6-40x denser in nutritional value than their mature counterpart.
